Iron Tamagoyaki Pan by FD Style

This iron frying pan was designed by Mitsunobu Hagino for his FD Style range of items.

The concept here is to combine design excellence with the skills in making present in the community of small firms in the Tsubame-Sanjo region of Niigata.   With FD Style setting the specifications of the pan, it was made by the Sanjo based Prince company.

Alongside the heat retention and distribution effects inherent in an iron pan, it has been treated with a special process to prevent rust, and enhance the ease of use.  It is suitable for both IH and direct flame cookers.

Tamagoyaki, a kind of box shaped omelette, is a staple of Japanese sushi restaurants and the ambassadorial dish that you traditionally try first in order to assess the overall quality of the establishment.  It is satisfying to make at home too, and often makes an appearance in bento lunchboxes.  But the possibilities for this heavy duty pan are not limited to this, and with its treated bamboo handle and surface, it is a pleasure to use in a variety of ways.

Care is relatively simple, with a good amount of oil recommended on first use, but after this an easy cleaning regimen.  It is better to avoid washing with detergent, but rather a simple application of hot water and a scraper (perhaps a tawashi, or a pot brush).  If there are any signs of rust, which is rare, a stronger metal scraper can be used to take it off.  When storing, a thin application of oil is advised.

The pan is 382mm long (with the handle 115mm within this).  It is 145mm wide.  It weighs 840g.
